White Chicken Chili

Ingredients

  • 1 lb. Chicken
  • 1/2 cup quinoa
  • 3 cup chicken broth
  • 1 onion diced
  • 1/2 cup frozen corn
  • 1 package white mushrooms
  • 1 cup sliced radishes
  • 1 jalapeno
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 Tbsp oregano
  • 1 tsp salt (or to taste)
  • 2 cans cannellini beans (or great northern beans)
  • 1 cup Greek yogurt

Directions

  1. First add the chicken to the crock pot. Then add the onions, mushrooms, chicken broth, jalapeno, and seasoning. Cook on high for five hours. Turn the crock pot to low and then add the Greek yogurt and beans. Stir thoroughly and serve.
  2. Top with jalapeno, avocado, parsley or cheese.
