Ingredients

  • 8 oz. French green beans, trimmed and cut diagonally in half (about 2 cups)
  • 1 (5-oz.) pkg. spring salad greens
  • 1 (15-oz.) can cannellini beans, rinsed and drained
  • 1 cup grape tomatoes, halved
  • 1/2 cup pitted kalamata olives
  • 1/4 red onion, cut into thin wedges
  • 1 cup light Italian salad dressing, divided
  • Shaved Parmesan cheese (optional)

  1. In a medium saucepan bring 1 quart salted water to boiling over high heat. Add green beans; cook 2 to 3 minutes or until crisp-tender. With a slotted spoon, transfer green beans to a bowl of ice water. Let cool 3 minutes; drain.
  2. In a large serving bowl combine green beans with salad greens, cannellini beans, tomatoes, olives and onion. Drizzle with half the dressing; toss to coat. Season with salt and pepper to taste and (if desired) top with Parmesan. Serve with remaining dressing.
