Ingredients

  • 7 tbsp. fat-free plain Greek yogurt, divided
  • 1-1/2 tsp. minced fresh garlic, divided
  • 1 lb. extra-lean ground turkey breast
  • 1 cup chopped fresh spinach
  • 1/2 cup finely chopped white mushrooms
  • 1/3 cup chopped red onion
  • 5 thin honey-wheat sandwich buns
  • 10 thin tomato slices
  • 2 cups fresh spinach leaves

  1. For the sauce, in a small bowl combine 5 tablespoons of the yogurt and 1/2 teaspoon of the garlic. Refrigerate until serving time.
  2. In a large bowl combine ground turkey, chopped spinach, mushrooms, onion, and remaining 1 teaspoon garlic and 2 tablespoons yogurt; mix lightly. Form into 5 (4-inch) patties.
  3. Coat a large nonstick skillet or grill pan with nonstick cooking spray; place over medium-high heat. Cook patties 3 minutes per side or until an instant-read thermometer registers 165°F (do not overcook).
  4. Spread each bun with 1 tablespoon of the sauce. Place 1 burger in each bun, top with 2 tomato slices, and spinach leaves. Serve warm.
