Ingredients

  • 1 lb. ground turkey breast
  • 1/2 cup chopped onion
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned no-salt-added corn, rinsed and drained
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 (4-oz.) can chopped green chiles
  • 12 (7-inch) lowfat whole-wheat taco shells or wraps
  • 1 cup shredded lowfat Monterey Jack or Cheddar(4 oz.)
  • Shredded lettuce, chopped tomatoes (optional)

  1. Coat a large nonstick skillet with cooking spray; place over medium heat. Add ground turkey and onion; cook and stir 5 to 7 minutes or until turkey is no longer pink; drain fat.
  2. Stir in beans, corn, cumin, chili powder and chiles. Return to medium heat; cook and stir 2 minutes or until heated through.
  3. Spoon 1/3 cup of the turkey mixture into each taco shell. Sprinkle with cheese, top with lettuce and tomatoes (if desired), and serve.
