Ingredients

  • 5 or 6 large ripe tomatoes, coarsely chopped
  • 2 or 3 medium cucumbers, seeded and coarsely chopped
  • 1 large red onion, chopped
  • 1 large green bell pepper, coarsely chopped
  • 1/2 cup cider vinegar
  • 1/2 cup olive oil
  • 1/4 cup sugar
  • 1 clove garlic, minced (1 tsp.)
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano

  1. In a large bowl combine tomatoes, cucumbers, bell pepper and onion; set aside. In a small bowl whisk together vinegar, oil, sugar, garlic, basil and oregano. Season with salt and pepper to taste. Pour over vegetables; toss gently to coat. Cover and refrigerate at least 2 hours. Toss once more before serving.
