Ingredients

  • 1 (16-oz.) pkg. broccoli florets
  • 2 lbs. boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 tbsp. butter
  • 1 (14.75-oz.) can creamed corn
  • 1 (8-oz.) pkg. sliced Swiss cheese (16 slices)
  • 1/2 cup lowfat milk
  • 1 (10.75-oz.) can cream of chicken soup
  • 1 (6-oz.) pkg. chicken-flavored or cornbread stuffing mix
  • 1/2 cup butter, melted

  1. Preheat oven to 350°F. Lightly coat a rectangular 3-quart baking dish with nonstick cooking spray. Cook broccoli according to package directions just until tender; drain and set aside.
  2. Meanwhile, in a large skillet melt 2 tablespoons butter over medium heat. Season chicken with salt and pepper to taste. Add to skillet; cook and stir until browned. Transfer chicken to baking dish. Top with corn, 8 cheese slices, and cooked broccoli. Set aside.
  3. In a medium bowl whisk together milk and soup until smooth; pour over broccoli in baking dish. Top with remaining cheese. In another medium bowl stir together stuffing mix and melted butter; sprinkle on cheese.
  4. Bake 25 to 30 minutes or until bubbly around the edges and stuffing is golden. Let stand 10 minutes before serving.
