Ingredients

  • 1 (10-oz.) pkg. fresh sugar snap peas
  • 1 (14-oz.) can whole-kernel corn, drained
  • 1/2 cup sliced cherry tomatoes
  • 6 green onions, sliced, divided
  • 3 tbsp. butter, cut into small cubes
  • 1 tbsp. chopped fresh parsley

  1. Preheat grill to high (400°F to 450°F). In a large bowl combine snap peas, corn, tomatoes, half the green onions, and butter; toss. Season with salt and pepper to taste.
  2. Place snap peas mixture in the center of a 9x13-inch sheet of heavy-duty foil. Fold up edges, and crimp tightly to seal.
  3. Place foil packet on grill. Grill 15 minutes or until snap peas are tender. Carefully transfer from foil packet to a serving bowl, sprinkle with parsley, and serve.
