Stewed Coconut Beef with Cauliflower Steaks

Ingredients

  • 1 head cauliflower cut crosswise into 4 (3/4-inch-thick) “steaks”
  • 1 pound Open Acres® ground beef
  • 1 (13.5 oz.) can Full Circle™ Organic Unsweetened Coconut Milk
  • 1 cup Full Circle™ Organic Tomato & Basil Pasta Sauce
  • Fresh basil leaves for garnish (optional)

Directions

  1. Preheat oven to 400°. Place cauliflower steaks on a rimmed baking pan; spray both sides with cooking spray. Bake 25 minutes or until tender, turning once. Cook beef in a large skillet over medium-high heat 7 minutes, stirring frequently. Stir in coconut milk and pasta sauce; reduce heat to medium and cook 8 minutes or until slightly reduced. Season with salt and pepper to taste. Serve cauliflower steaks topped with beef mixture garnished with basil, if desired. Serves 4.
