Ingredients

  • 2 tbsp. light brown sugar
  • 1 tbsp. smoked paprika
  • 1/2 tsp. orange zest
  • 1/2 tsp. cayenne
  • 4 (4-oz.) halibut fillets

  1. In a small bowl combine brown sugar, paprika, orange zest and cayenne. Set aside. Coat a large nonstick skillet with nonstick cooking spray. Place skillet over medium-high heat; heat 2 minutes.
  2. Meanwhile, rub half the brown sugar mixture onto one side of fillets (mixture may form a paste). Place fillets, coated side down, in hot skillet. Reduce heat to medium; cook 5 to 7 minutes.
  3. Sprinkle remaining brown sugar mixture on uncoated side of fillets. Turn and cook 5 to 7 minutes more or until fish flakes easily with a fork. Serve immediately.
