Ingredients

  • 1 (8-oz.) can tomato sauce
  • 1 (1.5-oz.) pkg. enchilada sauce mix
  • 1 lb. lean ground beef or ground turkey
  • 12 (6-inch) corn tortillas
  • 2 (15-oz.) cans chili beans
  • 3 cups shredded Colby?Monterey Jack blend
  • Shredded lettuce, sour cream, bottled salsa and/or guacamole for serving (optional)

  1. Preheat oven to 325°F. Lightly coat a 2-quart square baking dish with nonstick cooking spray. Set aside. In a large skillet cook and stir ground beef over medium-high heat until browned. Drain fat. Stir in beans. Set aside.
  2. Meanwhile, for sauce, in a small saucepan stir together tomato sauce, enchilada sauce mix and 1 1/2 cups water. Bring to boiling; reduce heat. Simmer, uncovered, 5 minutes. Reserve 1/2 cup of the sauce; set aside. Stir remaining sauce into beef mixture.
  3. Spoon half of the reserved sauce into prepared baking dish. Top with 4 tortillas. Spoon half of the beef mixture over tortillas. Sprinkle with one-third of the cheese. Repeat layers with another 4 tortillas, remaining beef mixture and another third of the cheese. Top with remaining tortillas, reserved sauce and cheese.
  4. Bake 20 to 25 minutes or until bubbly. Let stand 10 minutes. If desired, serve with lettuce, sour cream, salsa, and/or guacamole.
