Shrimp in Yellow Chile Sauce

Ingredients

  • 3 tbsp. olive oil
  • 1 medium onion, diced
  • 2 large tomatoes, diced
  • 1/4 cup Worcestershire sauce
  • 2 tsp. Caribbean hot sauce or ajà amarillo paste*
  • 1 tsp. sugar
  • 3/4 cup red wine or fish broth
  • 1 lb. fresh shrimp, peeled and deveined
  • 2 tbsp. fresh lime juice
  • 1/4 cup minced fresh cilantro
  • Cooked white rice

  1. For sauce, heat oil in a large skillet over medium-high heat. Add onion, tomatoes, Worcestershire, hot sauce and sugar. Cook until vegetables are soft.
  2. Transfer to blender and blend until sauce is smooth.
  3. Return sauce to skillet; cook over high heat, stirring continuously, until sauce thickens.
  4. Add wine and bring mixture to just boiling. Reduce to a simmer. Add shrimp; stir to coat. Cook and stir 5 minutes or until shrimp are opaque. Remove from heat, and season with salt and pepper to taste.
  5. Drizzle with lime juice and sprinkle with cilantro. Serve over rice.
