Ingredients

  • 2 (1-lb.) pork tenderloins
  • 2 tbsp. Dijon mustard
  • 1/2 cup plain breadcrumbs
  • 1/2 tsp. dried sage
  • 2 tsp. extra virgin olive oil

  1. Preheat oven to 425°F. Coat a shallow baking dish with nonstick cooking spray. Rub each tenderloin evenly with mustard; set aside.
  2. In a shallow dish or pie plate combine breadcrumbs, sage, and pepper to taste. Roll each tenderloin in breadcrumb mixture, pressing lightly to coat.
  3. Place tenderloins in baking dish; drizzle with oil. Roast 30 minutes or until an instant-read thermometer registers 145°F, turning once halfway through cooking. Remove from oven; let stand 5 minutes before slicing.
