George's Cucumber Tuna Roll Picnic

Ingredients

  • Cucumber Tuna Rolls
  • 15 oz chunk tuna in water, drained
  • 1 cup frozen carrots and peas
  • 1/2 cup mayonnaise
  • 1/4 cup red bell pepper, diced
  • 1 tbsp Worcestershire sauce
  • 3 English Cucumbers
  • salt and pepper to taste
  • Toothpicks, as needed
  • Tropical Fruit Salad
  • 1/2 Pineapple, peeled, cored and diced
  • 1/2 Papaya, peeled, seeded and diced
  • 1/2 Small seedless watermelon, peeled and diced
  • 8 oz Red seedless grapes, washed
  • 1 Medium lemon, juiced
  • Colombian Salpicon
  • 1/2 Pineapple, peeled, cored and diced
  • 1/2 Papaya, peeled, seeded and diced
  • 1/2 Small seedless watermelon, peeled and diced
  • 8 oz Red seedless grapes, washed and halved
  • 2 liters club soda, chilled
  • 1 pkg Tropical Kool-Aid mix
  • 1/2 cup granulated sugar

  1. Wash cucumbers and remove ends with a knife. Cut cucumbers into long thin ribbons using a mandolin or a wide vegetable peeler. Set aside.
  2. Combine remaining ingredients in a mixing bowl and stir well to combine. Season to taste with salt and pepper. Lay out cucumber slices. To one end of cucumber ribbon, add a 1 oz. scoop of tuna salad. Roll up the cucumber around the tuna salad and secure with a toothpick. Repeat process until all tuna salad is used (4-6 rolls per person). Keep cold until serving time.
  3. For tropical fruit salad, combine all fruits in a mixing bowl. Season to taste with freshly squeezed lemon juice. Keep cold until serving time.
  4. For Salpicon, cut all fruits and combine. Chill thoroughly. Combine Kool-Aid mix, sugar and club soda in a large pitcher. Stir until sugar is dissolved. Fill glasses half full with chilled fruit, then top with the cold tropical soda. Serve with a spoon!
