Pepper's Veggie Tots

Ingredients

  • 1 cup Our Family steamable broccoli florets
  • 1 cup Our Family steamable cauliflower florets
  • 2 Our Family large eggs, lightly beaten
  • 2/3 cup Our Family whole grain bread crumbs (gluten-free bread crumbs for gluten-free option)
  • 2 Cloves garlic, finely chopped
  • 1/4 cup Onion, finely chopped
  • 1 cup Our Family shredded cheddar cheese (non-dairy cheese substitute for dairy-free option)
  • 1/4 teaspoon Our Family salt
  • 1/4 teaspoon Our Family ground black pepper

Directions

  1. Preheat oven to 400 degrees F. Steam broccoli and cauliflower according to package instructions. Once slightly cooled, finely dice the broccoli and cauliflower.
  2. Combine broccoli, cauliflower, egg, bread crumbs, garlic, onion, cheese, salt, and pepper in a large bowl; invite kids to help add each ingredient and mix well.
  3. Invite kids to make the tots, shaping approximately two tablespoons of the mixture into the 'tot' shape. Lightly spray baking sheet with cooking spray and place tots evenly spaced on the sheet.
  4. Bake for 8 to 10 minutes. Turn and bake for an additional 7 to 8 minutes, or until golden brown. Serve. Refrigerate any uneaten portion and discard after 4 days.
