Peppercorn Steaks

Ingredients

  • 4 New York strip steaks, 1-1/2 inches thick
  • 3/4 cup whole black peppercorns, crushed
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup chopped green onion
  • 2 cups dry red wine or beef broth
  • 1 bottle capers, drained

  1. Preheat grill to medium (300°F to 350°F). Coat both sides of steaks with crushed peppercorns; brush with oil.
  2. Grill steaks, covered, 6 minutes per side or until an instant-read thermometer registers 145°F, or to desired doneness. Remove from grill; let stand 5 minutes.
  3. Meanwhile, melt butter in a medium skillet; add green onion. Cook, stirring, 1 minute. Add wine and capers; cook until liquid is reduced by half, about 15 minutes. Spoon sauce over steaks, and serve.
