- Preheat oven to 400°F. Bake sweet potatoes 45 to 55 minutes or until tender. Cut potatoes in half and scoop out the pulp into a mixing bowl. Add orange juice, nutmeg, allspice and 2 tablespoons of the butter; beat until fluffy. Season with salt and pepper to taste.
- Lightly coat a 1-quart baking dish with nonstick cooking spray. Spoon potatoes into dish. Drizzle molasses over potatoes and dot with remaining 1 teaspoon butter.
- Bake, uncovered, 15 to 20 minutes or until heated through. Serve hot.
