- Season fillets with 1 tablespoon of the oregano, and salt and pepper to taste. Drizzle with 1 tablespoon of the oil; set aside.
- For the relish, in a small bowl combine tomatoes, olives, onions, vinegar, remaining 1 tablespoon oregano, remaining 1 tablespoon oil, and salt and pepper to taste. Set aside.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Place fillets on grill rack; grill 9 to 11 minutes or until fish flakes easily with a fork. Remove from grill, top with relish, and serve.
