- In a large saucepan combine lentils and 3 1/2 cups cold water. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or until partially tender. Stir in rice. Return to boiling; reduce heat. Cover and simmer about 20 minutes more or until lentils and rice are tender.
- Meanwhile, heat oil in a large skillet over medium heat. Add onion; cook until tender and lightly browned, stirring occasionally.
- Season lentil mixture with salt and pepper to taste; spoon into bowls. Top with onions, sour cream and lemon wedges. Serve warm.
