Ingredients

  • 1 1/4 cups dried lentils
  • 1/2 cup white rice
  • 1 large sweet onion, quartered and thinly sliced
  • 1 tbsp. vegetable oil
  • 1 (8-oz.) pkg. sour cream
  • 1 lemon, cut into wedges

  1. In a large saucepan combine lentils and 3 1/2 cups cold water. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or until partially tender. Stir in rice. Return to boiling; reduce heat. Cover and simmer about 20 minutes more or until lentils and rice are tender.
  2. Meanwhile, heat oil in a large skillet over medium heat. Add onion; cook until tender and lightly browned, stirring occasionally.
  3. Season lentil mixture with salt and pepper to taste; spoon into bowls. Top with onions, sour cream and lemon wedges. Serve warm.
