Lemon-Feta Crab Pasta

Ingredients

  • 8 oz. thin spaghetti or vermicelli
  • 1/4 cup olive oil
  • 1 medium shallot, halved and thinly sliced
  • 2 garlic cloves, minced
  • 1/2 tsp. Greek seasoning or dried oregano
  • 12 oz. lump snow crabmeat
  • 1 1/2 cups torn spinach leaves
  • 1 cup grape tomatoes, halved
  • 2 tbsp. fresh lemon juice
  • 1 tsp. grated lemon zest
  • 3 oz. sun-dried tomato?basil feta crumbles

  1. Cook pasta al dente according to package directions; drain (do not rinse). Transfer to a large serving bowl; cover to keep warm.
  2. Meanwhile, in a large nonstick skillet heat oil over medium heat. Add shallot and garlic; cook and stir 2 minutes. Add Greek seasoning.
  3. Stir in crabmeat, spinach and tomatoes; cook and stir 2 to 3 minutes or until crab is heated through and spinach begins to wilt. Stir in lemon juice and zest.
  4. Add crab mixture to warm pasta; toss. Season with salt and pepper to taste. Place in 4 bowls, sprinkle with feta, and serve.
