Ingredients

  • 1/2 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh basil
  • 3 green onions, chopped
  • 2 tbsp. white wine vinegar
  • 1/2 tsp. freshly ground pepper
  • 4 bone-in chicken breasts

  1. For marinade, in a small bowl whisk together lemon juice, oil, basil, onions, vinegar and pepper. Reserve 1/4 cup.
  2. Place chicken in a shallow dish or resealable plastic bag. Add marinade. Cover or seal and chill 1 hour, turning occasionally.
  3. Preheat grill to medium-high (350°F to 400°F). Remove chicken from marinade; discard marinade. Grill chicken, covered, 35 to 40 minutes or until tender and no longer pink (170°F), turning and basting occasionally with reserved 1/4 cup marinade.
