Layered Bean Tostadas

Ingredients

  • 1 (16-oz.) can spicy refried beans
  • 1 bag boil-in-bag white rice
  • 1 (14.5-oz.) can diced tomatoes with green chiles
  • 1/2 lb. pasteurized processed cheese, cut into cubes
  • 1 (5-oz.) pkg. tostada shells (10 shells)
  • 1 (8-oz.) pkg. sour cream
  • 1 (10-oz.) pkg. shredded lettuce
  • 2 cups shredded Cheddar (8 oz.)
  • 3 large plum tomatoes, chopped
  • 1 (2.25-oz.) can sliced pitted ripe olives, drained

  1. Cook rice according to package directions; keep covered and set aside.
  2. Meanwhile, in a small saucepan cook and stir refried beans over low heat just until heated through; keep covered. In a medium saucepan cook tomatoes and cubed cheese over medium heat about 5 minutes or just until cheese is melted, stirring frequently.
  3. Place tostada shells on individual plates. Layer with refried beans, sour cream, rice, tomato mixture, lettuce, Cheddar, tomatoes and olives. Serve immediately.
