GLUTEN FREE VERSION: Read labels carefully, bacon, sour cream, tortilla shells and taco blend cheese can all contain gluten. VEGETARIAN VERSION: Omit bacon.
Directions
- In a large skillet, render bacon until cooked, about 6 minutes. Set aside the bacon and drain the grease into a jar for disposal.
- In the same pan, add the onions, and jalapeño. Cook the onion and pepper for 1 minute and add the eggs. Scramble the eggs and serve with bacon in a tortilla. Garnish with sour cream, cheese and cilantro!
- Tip! To warm your tortilla, lay them over the eggs once the eggs are finished. The steam for the eggs will warm tour tortilla!
