Late Morning Breakfast Tacos

GLUTEN FREE VERSION: Read labels carefully, bacon, sour cream, tortilla shells and taco blend cheese can all contain gluten. VEGETARIAN VERSION: Omit bacon.

Ingredients

  • 6 slices bacon
  • 1 onion, diced
  • 1 jalapeño, diced
  • 6 eggs
  • 1 cup sour cream
  • 1/4 cilantro, choped
  • 6 tortilla shells (flour or corn)
  • 1 cup of taco blend cheese

Directions

  1. In a large skillet, render bacon until cooked, about 6 minutes. Set aside the bacon and drain the grease into a jar for disposal.
  2. In the same pan, add the onions, and jalapeño. Cook the onion and pepper for 1 minute and add the eggs. Scramble the eggs and serve with bacon in a tortilla. Garnish with sour cream, cheese and cilantro!
  3. Tip! To warm your tortilla, lay them over the eggs once the eggs are finished. The steam for the eggs will warm tour tortilla!
