Jack-o'-lantern Stuffed Peppers

Dish type


  • 4 bell peppers (any color)
  • 1 lbs ground beef (can use turkey, chicken, pork ect.)
  • 1 package of cream cheese
  • 1 chopped jalapeno (remove seeds if wanting a milder spice)
  • Cilantro
  • 1/2 cup diced tomato


  1. Fully cook ground beef in a skillet until brown
  2. Add in tomato's, jalapeno and cream cheese.
  3. Turn heat down low and allow cheese to melt into ingredients.
  4. While the cheese melts use a knife to cut the top off of your peppers and remove the seeds (keep the stem on the top as you would if carving a pumpkin.)
  5. Then cut out eyes, nose, mouth to replicate a jack o lantern.
  6. Remove meat filling from stove and scoop into your bell peppers.
  7. Place into preheated oven at 375 degrees with the bell pepper top on and tin foil over the entire dish.
  8. Bake for 30 mins or until desired softness of pepper.
  9. Once cooled top with cilantro and enjoy!
