Ingredients

  • 2 (5- to 6-oz.) boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 garlic cloves, minced
  • 2 tbsp. chopped shallots
  • 1 can diced tomatoes with basil, garlic and oregano
  • 3/4 cup shredded Parmesan (3 oz.)
  • 1 (3.5 oz.) pkg. sliced pepperoni
  • 2 (10-oz.) pkgs. frozen chopped spinach, thawed and well-drained; or 8 cups packed fresh spinach leaves
  • 2 tbsp. chopped fresh basil
  • 1 cup shredded mozzarella (4 oz.) (optional)
  • 2 cups hot cooked rice
  • 1 tbsp. olive oil

  1. Heat oil in a large nonstick skillet over medium heat. Add chicken, garlic and shallots; cook, stirring, 5 minutes or until chicken is no longer pink.
  2. Stir in tomatoes, Parmesan and pepperoni. Simmer, covered, 20 minutes, stirring occasionally.
  3. Add spinach and basil; simmer, covered, 10 minutes, stirring occasionally. Sprinkle with mozzarella (if desired), spoon over rice, and serve.
