- Preheat oven to 400°F. Cut potatoes in half crosswise. Cut each half lengthwise into 6 wedges.
- Place potato wedges in a shallow nonstick roasting pan or on a baking sheet lined with foil coated with nonstick cooking spray. Bake 15 minutes.
- Meanwhile, combine butter, ginger, salt and honey in a small pan. Cook over low heat until butter melts.
- Remove potatoes from oven; baste generously with honey mixture. Bake 15 minutes more or until fork-tender. Season with salt and pepper to taste, and serve.
