- Preheat oven to 400°F. Lightly coat 12 (2 1/2-inch) muffin cups with nonstick cooking spray or line with paper liners. Set aside.
- Spoon batter into prepared muffin cups. Bake 15 to 20 minutes or until golden and a toothpick inserted near center of muffins comes out clean. Cool slightly in pan. Serve warm.
- In a large bowl stir together milk, oil, egg and vanilla until combined. Gradually add flour, sugar, baking powder and salt. Stir just until combined (batter will still be lumpy). Fold in blueberries.
