- Combine mustard, herb seasoning, salt and pepper, and rub over the entire roast.
- Brown the roast in a skillet.
- Place the roast on a roasting rack in a roasting pan and cover the top with Dijon mustard. Mix the bread crumbs, cheese, basil, thyme, rosemary, garlic, and oil, and apply it to the roast.
- Bake the roast at 350°F for 1-1/2 to 2 hours or until internal temperature reaches 145°F. Allow to rest before carving.
