- In a large resealable plastic bag combine pork, preserves, honey, oil, rosemary and red pepper flakes. Seal bag; turn to coat. Refrigerate 1 to 8 hours.
- Preheat grill to medium-high (350°F to 400°F). Remove pork from marinade; reserve marinade. Alternately thread pork and apricots onto skewers.? Brush with reserved marinade.
- Place skewers on grill. Grill, covered, 6 to 8 minutes or until an instant-read thermometer inserted into the pork registers 160°F, turning skewers occasionally. If desired, place skewers on a bed of watercress, sprinkle with rosemary, and serve.
