Ingredients

  • 1 (12-oz.) pkg. small pasta such as mini farfalle
  • 1/4 cup olive oil
  • 1 small onion, sliced
  • 1 red bell pepper, seeded and sliced
  • 1 cup asparagus tips
  • 2 garlic cloves, finely chopped
  • 1/2 cup packed fresh basil leaves, finely chopped
  • 1/2 cup crumbled goat cheese (2 oz.)

  1. Cook pasta al dente according to package directions. Drain; set aside.
  2. Meanwhile, in a large skillet heat oil over high heat. Add onion, bell pepper and asparagus; sauté 5 minutes or until tender. Add garlic; sauté 30 seconds. Season with salt and pepper to taste.
  3. Add basil and goat cheese; cook until cheese begins to melt. Toss to coat vegetables. Add cooked pasta; toss to coat. Season with salt and pepper to taste. Serve warm.
