- Preheat oven to 350°F. Grease and flour a 9x5x3-inch or 8x4x2-inch loaf pan. For the batter, in a small bowl stir together flour, baking powder, cinnamon, salt and baking soda. Set aside.
- In a medium bowl stir together egg, apples, granulated sugar, oil and vanilla. Add flour mixture and walnuts; stir just until moistened. Spoon batter into pan.
- Bake 45 minutes or until a wooden toothpick inserted into the center comes out clean. Let cake cool in pan 10 minutes. Remove cake from pan; let cool completely on a wire rack. Cut into squares, sprinkle with powdered sugar, and serve.
