Ingredients

  • 1/2 cup flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. grated orange zest
  • 1/4 tsp. salt
  • 3 tbsp. sugar
  • 3/4 cup milk
  • 1/2 cup Simply Orange Juice
  • 1 cup Deans Country Fresh Cottage Cheese
  • 4 tbsp. butter, melted and cooled
  • 1 large egg
  • 1/4 tsp. pure vanilla extract
  • Maple syrup, powdered sugar (optional)

  1. In a large bowl combine flour, baking powder, baking soda, orange zest, salt and sugar. Set aside.
  2. In a separate bowl whisk together milk, orange juice, cottage cheese, butter, egg and vanilla.
  3. Make a well in the center of the flour mixture; pour the cottage cheese mixture into the well. Stir together gently just until combined (the batter should be lumpy). Do not overmix.
  4. Coat a nonstick griddle or large nonstick pan with nonstick cooking spray. Place over medium heat. For each pancake, spoon 1/4 cup batter onto griddle. When bubbles appear, flip the pancakes gently and cook until lightly browned. Transfer to a warmed plate. Continue with remaining batter. Drizzle pancakes with maple syrup or honey and serve.
