Fideos with Pan-Grilled Sausage

  • 1 regular size package Eckrich® Smoked Sausage
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, seeded, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 8 oz fideos or angel hair pasta, broken into 1-inch pieces
  • 1 can 15 oz tomato sauce
  • 1 can 14.5 oz chicken broth
  • 1 cup frozen or canned corn

  1. Cut sausage into ½-inch thick slices
  2. Heat oil in 6-quart pan over medium heat.
  3. Add sausage. Cook and stir until browned, about 8 minutes. Remove sausage to a plate.
  4. Add onion, bell pepper, garlic and chili powder to the skillet. Cook and stir until crisp-tender, about 5 minutes.
  5. Stir in pasta, cook and stir until golden, 2 to 3 minutes. Add tomato sauce, broth, corn and sausage. Cover; simmer over medium-low heat, stirring frequently, until pasta is cooked and most of the liquid is absorbed, about 10 minutes.
