- In a large bowl combine fruit cocktail, pineapple, bananas and apples. Add orange juice concentrate; toss to coat. Set aside.
- In a medium bowl and using an an electric mixer or whisk, beat whipping cream until thickened. Beat in powdered sugar and vanilla until soft peaks form. Stir in mayonnaise and 2 tablespoons reserved cherry juice; fold into fruit mixture. Transfer to a serving bowl or a rectangular 3-quart dish.
- Spread top with remaining whipped cream; arrange cherries on top, sprinkle with chopped nuts (if desired), and serve.
