Ingredients

  • 2 (15-oz.) cans light fruit cocktail, drained
  • 1 (15.25-oz.) can crushed pineapple in juice, drained
  • 6 bananas, sliced
  • 3 large apples, cored and coarsely chopped
  • 2 tbsp. orange juice concentrate
  • 2 cups whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp. vanilla extract
  • 3 tbsp. mayonnaise
  • 1 (10-oz.) jar maraschino cherries, drained, juice reserved
  • 1/4 cup chopped pecans or walnuts (optional)

  1. In a large bowl combine fruit cocktail, pineapple, bananas and apples. Add orange juice concentrate; toss to coat. Set aside.
  2. In a medium bowl and using an an electric mixer or whisk, beat whipping cream until thickened. Beat in powdered sugar and vanilla until soft peaks form. Stir in mayonnaise and 2 tablespoons reserved cherry juice; fold into fruit mixture. Transfer to a serving bowl or a rectangular 3-quart dish.
  3. Spread top with remaining whipped cream; arrange cherries on top, sprinkle with chopped nuts (if desired), and serve.
