Ingredients

  • 1 lb. ground turkey
  • 2 tbsp. olive oil
  • 1 cup white or brown rice
  • 2 tbsp. Worcestershire sauce
  • 3 large cloves garlic, minced (about 2 tbsp.)
  • 3 large green bell peppers, halved lengthwise, stemmed and seeded
  • 1 (24-oz.) jar marinara sauce with olive oil and garlic

  1. Preheat oven to 350°F. Heat oil in a large skillet over medium-high heat. Add turkey and garlic; cook and stir until turkey is browned. Stir in rice, Worcestershire sauce and 2 cups water. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or until rice is tender. Season with salt and pepper to taste. Keep covered; set aside.
  2. Meanwhile, cook peppers in boiling water 3 minutes. Drain on paper towels, cut sides down.
  3. Spoon turkey mixture into pepper halves. Place stuffed peppers in a 2-quart rectangular baking dish. Spoon marinara over peppers. Cover and bake 30 to 35 minutes or until heated through and peppers are tender. Let stand 5 minutes. Serve warm.
