Ingredients

  • 1 (16-oz.) pkg. frozen broccoli cuts
  • 1 lb. boneless, skinless chicken breasts, cooked, cut into cubes
  • 1 (10.75-oz.) can low-fat cream of chicken soup
  • 1 cup light mayonnaise
  • 1/4 cup whole milk
  • 1 to 2 tsp. curry powder
  • 2 cups shredded Cheddar
  • 1 cup soft breadcrumbs
  • 2 tbsp. butter, melted
  • 2 1/2 cups uncooked white rice

  1. Preheat oven to 350ÂF. Coat a rectangular 3-quart baking dish with nonstick cooking spray. Cook broccoli according to package directions; drain well.
  2. Place chicken in baking dish; top with broccoli. In a medium bowl combine soup, mayonnaise, milk and curry powder; spread over broccoli and chicken. Sprinkle with cheese; set aside. In a small bowl combine breadcrumbs and butter; sprinkle over cheese.
  3. Bake, uncovered, 25 minutes or until heated through and breadcrumbs are golden brown. Meanwhile, cook rice according to package directions. Serve chicken over rice.
