- For the rub, in a small bowl stir together brown sugar, paprika, garlic pepper, cumin, oregano, onion salt and thyme. With a sharp knife make shallow diagonal slashes on both sides of steak. Rub both sides of steak evenly with rub. Place steak on a plate; cover and set aside.
- Preheat grill to medium direct heat (300°F to 350°F). Grill steak, covered, 5 to 8 minutes per side (145°F) or to desired doneness.
- Remove steak from grill; let stand 5 minutes. Cut into thin slices, and serve.
