Ingredients

  • 2 (15.25-oz.) cans yellow whole-kernel corn, drained
  • 2 (11-oz.) cans white whole-kernel corn, drained
  • 2 medium cucumbers, seeded and chopped
  • 3 Roma (plum) tomatoes or 1 large tomato, seeded and chopped
  • 1/2 cup sliced green onions
  • 2/3 cup mayonnaise
  • 1 1/2 tsp. minced fresh garlic
  • 1/2 tsp. pepper
  • 1/4 tsp. salt

  1. In a large bowl combine yellow corn, white corn, cucumbers, tomatoes and green onions. Set aside.
  2. For the dressing, in a small bowl stir together mayonnaise, garlic, pepper and salt. Add to corn mixture; gently toss to combine. Cover and refrigerate 1 to 3 hours. Toss again before serving.
