Ingredients

  • 2 tbsp. butter or margarine
  • 1/2 cup chopped red bell pepper
  • 2 large shallots, minced (1/4 cup)
  • 1 (8-oz.) tub garlic-herb cream cheese
  • 1/2 tsp. hot sauce
  • 12 oz. king crab meat, chopped
  • 2 cups cooked white rice
  • 1 (10-count) pkg. crÃpe shells
  • 2 (9-oz.) pkgs. frozen creamed spinach, thawed
  • 1/2 cup shredded Parmesan cheese

  1. Preheat oven to 325°F. Coat an 11x7x2-inch baking dish with nonstick cooking spray.
  2. Heat butter in a large skillet over medium-high heat. Add bell pepper and shallots; cook and stir until soft. Stir in cream cheese and hot sauce. Stir in crab and rice.
  3. Spoon 1/3 cup of crab mixture along one edge of a crÃpe shell; roll up shell jelly-roll style and place in baking dish. Repeat with remaining crab mixture and crÃpe shells. Spoon creamed spinach down the center of rolled crÃpes; sprinkle with Parmesan cheese.
  4. Bake 15 to 20 minutes or until cheese melts and crÃpes are lightly browned.
