Ingredients

  • 1 piece French bread
  • 1 garlic clove, halved
  • 2 medium tomatoes, cored and diced
  • 4 oz. chvre or other goat cheese, cut into bite-size pieces
  • 1/4 cup coarsely chopped fresh basil
  • 1 tbsp. white wine vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 3 tbsp. extra virgin olive oil

  1. Preheat broiler. Cut bread in half lengthwise. Rub cut sides with garlic. Place cut side up on a baking sheet. Broil 4 inches from heat 1 minute or until lightly toasted. Let cool slightly.
  2. Tear bread into bite-size pieces and place in a salad bowl. Add tomatoes, chvre and basil. Set aside.
  3. For the dressing, in a small bowl combine vinegar, salt and pepper; stir to dissolve salt. Whisk in oil. Pour dressing over salad; toss well. Serve immediately.
