- In a medium bowl stir together 1 package of the strawberry gelatin and 2 cups boiling water until dissolved. Stir in 2 cups cold water. Pour gelatin into a 3-quart rectangular baking dish. Cover and refrigerate about 2 hours or until set.
- Meanwhile, in a small bowl dissolve lemon gelatin in 1/2 cup boiling water. Cool to room temperature.
- In a large bowl stir together remaining package of the strawberry gelatin and 1 cup boiling water until dissolved. Stir in 1 cup cold water; cool to room temperature. Stir in strawberries. Carefully spoon strawberry mixture over chilled gelatin layers. Cover and refrigerate overnight. Cut into squares, top with whipped topping, and serve.
- In a large mixing bowl beat together cream cheese, sugar and vanilla with an electric mixer on medium speed until smooth. Gradually add cooled lemon gelatin and half-and-half; beat until smooth. Carefully pour lemon gelatin mixture over chilled strawberry gelatin. Cover and refrigerate 1 hour 30 minutes more or until lemon gelatin mixture is set.
