Chicken with Tomatoes and Cheese

Ingredients

  • 4 (4- to 5-oz.) boneless, skinless chicken breast halves
  • 2 tbsp. vegetable oil
  • 1 cup plain croutons
  • 1 to 2 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 2 small tomatoes, sliced
  • 1 cup shredded Colby-Monterey Jack cheese blend

  1. Preheat oven to 350°F. Coat a rectangular 2-quart baking dish with nonstick cooking spray; set aside.
  2. In a large skillet quickly brown chicken in hot oil over medium-high heat. Transfer chicken to baking dish. Sprinkle with croutons, oregano and pepper. Arrange tomatoes on top. Tightly cover with foil.
  3. Bake 15 minutes or until chicken is no longer pink (165°F). Remove foil. Sprinkle cheese on top. Bake 5 minutes more or until cheese melts.
