- Cook pasta al dente according to package directions. Drain; set aside. Meanwhile, heat oil in a large pot or Dutch oven over medium heat. Season chicken with salt and pepper to taste; add to pot. Cook, stirring, until browned and cooked through. Transfer chicken to a plate; set aside.
- Add stir-fry mix, garlic, Italian tomatoes, parsley, basil and broth to pot; stir. Simmer 10 minutes.
- Add chicken, plum tomatoes and cooked pasta; stir just until heated through. Top with Parmesan, if desired, and serve.
