Ingredients

  • 1 lb. whole-wheat penne pasta
  • 2 tbsp. olive oil
  • 3 boneless, skinless chicken breasts, cut into strips
  • 1/2 pkg. frozen bell pepper?onion stir-fry mix
  • 2 garlic cloves, minced
  • 1 can no-salt-added Italian tomatoes
  • 1 tbsp. dried parsley
  • 2 tsp. dried basil
  • 1 can fat-free chicken broth
  • 3 red or yellow Roma (plum) tomatoes, chopped
  • Grated Parmesan cheese (optional)

  1. Cook pasta al dente according to package directions. Drain; set aside. Meanwhile, heat oil in a large pot or Dutch oven over medium heat. Season chicken with salt and pepper to taste; add to pot. Cook, stirring, until browned and cooked through. Transfer chicken to a plate; set aside.
  2. Add stir-fry mix, garlic, Italian tomatoes, parsley, basil and broth to pot; stir. Simmer 10 minutes.
  3. Add chicken, plum tomatoes and cooked pasta; stir just until heated through. Top with Parmesan, if desired, and serve.
