  • 1 can (22 oz) BUSHS® Bourbon and Brown Sugar Grillin Beans®
  • 1 tbsp Olive oil
  • 1 lb boneless, skinless chicken tenderloins, cut into bite-sized pieces
  • 1 medium red bell pepper, coarsely chopped
  • 1 pkg (10 oz) Scoops® Tortilla Chips
  • 1 cup finely shredded Cheddar cheese

  1. Heat oil in 10-inch skillet over medium-high heat. Add chicken and pepper and cook for 5-7 minutes, until chicken is cooked through or until internal temperature reaches 170 degrees F and peppers are tender.
  2. Reduce heat to medium-low and stir in beans. Simmer 10 minutes.
  3. Remove from heat.
  4. Place chips on serving plates.
  5. Carefully spoon bean mixture into each chip.
  6. Top with cheese and serve hot.
