Biscuit Breakfast Quiches

  • 2/3 cup shredded swiss or cheddar cheese
  • 1/3 cup ham finely chopped
  • 1/4 cup green onion finely chopped
  • 4 eggs
  • 3 tbsp. milk
  • pinch salt
  • pinch pepper
  • 1 (12 oz.) package buttermilk biscuits


  1. Preheat oven to 350 F.
  2. Mix cheese, ham and green onions together in a bowl.
  3. Whisk in eggs, milk, salt and pepper until blended well.
  4. Open and separate biscuits. Press each biscuit into a 5-inch round on a lightly floured surface.
  5. Put one biscuit in each greased muffin cup. Press firmly to shape.
  6. Spoon mixture into each cup until 3/4s full. Bake at 350 F for 20 to 25 minutes, or until filling is set.
