Ingredients

  • 4 cups chopped fresh broccoli
  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 tbsp. peeled, grated gingerroot
  • 3 cups cooked white rice
  • 1 (10.75-oz.) can cream of chicken soup
  • 1 cup milk
  • 1 cup shredded Cheddar

  1. Preheat oven to 350°F. Lightly coat a rectangular 3-quart baking dish with nonstick cooking spray. In a large saucepan cook broccoli in a small amount of boiling salted water 6 to 8 minutes or until crisp-tender. Drain; set aside.
  2. In a large skillet cook and stir ground beef and onion until beef is browned; stir in garlic and ginger. Drain fat.
  3. In a large bowl stir together beef mixture, rice, soup, milk, cheese, and salt and pepper to taste. Add broccoli; lightly toss to combine. Spoon into baking dish.
  4. Bake 30 to 35 minutes or until bubbly around the edges. Let stand 10 minutes before serving.
