- For the filling, in a large skillet cook beef over medium-high heat until browned; drain fat. Stir in beans, tomatoes, salsa, cilantro, cumin, coriander and chili powder; bring to boiling. Reduce heat; simmer, uncovered, 5 to 10 minutes or until most of the liquid evaporates. Season with salt and pepper to taste.
- Spoon filling into warmed tortillas, sprinkle with cheese (if desired), and serve.
