- Preheat oven to 350°F. In a large Dutch oven heat oil over medium-high heat. Sprinkle beef with garlic powder and pepper. Add beef to pan; cook 5 minutes, turning to brown all sides. Remove meat from pan and lightly cover with foil.
- Add onion to pan; cook and stir 4 minutes or until tender. Stir in vinegar and broth, scraping up browned bits.
- Return beef to pan. Cover and place in oven. Roast 1 1/2 hours. Add mushrooms and chopped thyme; roast 30 minutes more or until beef is tender. Slice beef, and serve with mushrooms and (if desired) thyme sprigs.
