Ingredients

  • 2 ripe avocados, pitted, peeled, cut into chunks
  • Juice of 1 lemon or lime
  • 2 heaping cups strawberries, hulled, cut into slices 1/2-inch thick
  • 2 tbsp. extra virgin olive oil, walnut oil or hazelnut oil
  • 1/4 cup raspberry vinegar
  • 3/4 tsp. honey
  • 4 cups bite-size arugula or watercress (optional)
  • 1/4 cup toasted pine nuts*

  1. Combine avocado and lemon juice in a large glass or plastic bowl. Add strawberries, oil, vinegar and honey; season with salt and freshly ground pepper to taste. Mix well.
  2. If desired, spoon avocado mixture on arugula or watercress. Top with pine nuts, and serve.
