Avocado Seven Layer Salad


  • 16 cups Romaine lettuce, chopped
  • 4 each Bacon slices, cooked
  • 2 each Avocados From Mexico, mashed
  • 2 cups Black beans, canned, drained, rinsed
  • 2 cups Corn, canned, drained, rinsed
  • 2 cups Tomatoes, diced
  • 2 cups Cheese, cheddar, shredded
  • 1 cup Sour cream
  • 1 tsp. Lime juice
  • To taste Salt


  1. In a small bowl, mash avocados and add lime juice. Stir until well combined and salt to taste.
  2. In a trifle, evenly layer lettuce, black beans, corn, tomatoes, cheese, guacamole mixture, and sour cream. Evenly sprinkle bacon.
  3. Distribute into four bowls and serve.
