Ingredients

  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. mayonnaise
  • 1 tsp. spicy mustard
  • Juice of 1 lemon
  • 2 cups celery cut into 1/2-inch pieces
  • 1 cup chopped sweet white onion
  • 1 cup finely diced red bell pepper
  • 1 large Florida or Hass avocado, pitted, peeled, and cut into 1/2-inch pieces

  1. In a large bowl whisk together oil, mayonnaise, mustard, lemon juice, and salt to taste until well-blended.
  2. Add celery, onion and bell pepper to bowl; mix well. Add avocado; toss gently to coat. Season with freshly ground pepper to taste, and serve.
